Hi.
I'd be interested in a 7 string acoustic folk guitar for fingerpicking (preferably with a "bite" at the top of the neck so I can have as great a range of possible).
Any ideas where I might find such a creature IN THE UNITED KINGDOM? (Must be in the UK)

The Ibanez AJ307CE 7-String Acoustic/Electric Jumbo meets your stated needs. I have seen them for sale on Ebay from UK residents so presumably they are available there.

I don't want to make your life difficult but the neck width varies quite a lot from one brand of 7-string to another. The Ibanez was too narrow for me so I ended concocting my own from a Brazilian 10-string guitar.
